Ingredients
(makes 4 servings)
4 piece of chicken (breast, thigh, leg)
4 Tbsp butter or olive oil
1 white onion sliced
2-3 peppers sliced (red, orange, yellow or green)
1 Tbsp lime juice
1 Tbsp zest of the lime
1 clove minced garlic
1 Tbsp minced ginger
2 Tbsp honey
1 jalapeno (if desired)
Fajita seasoning
Salt & pepper to taste (if desired)
Fresh Cilantro (chopped)
Preparation
In a small bowl, zest the lime & add the juice
Stir in the honey, ginger and garlic
Use either the pre-sectioned Reynolds foil sheets or cut 12×10 sheets-you will build four packets
Add either 1 Tbsp butter or olive oil to the center of the foil, place chicken on top
Divide the veggies among the packets
Brush the zesty lime mix on the chicken & veggies Season with the fajita seasoning and salt & pepper
Fold the foil over the food inside and crimp several times to seal
Preheat the grill to med-high heat
Grill the packets until the chicken is cooked through: 12-15 minutes or 165 degrees F
Garnish the chicken with fresh chopped cilantro before serving
Add jalapenos if you like it spicy
Serve with avocado, black beans & Spanish rice to complete the dish!
